These grapes are a selection from plots in Eguisheim and Wettolsheim. The total area is limited to 0.85 hectares. The soil is rich in clay and also contains a large proportion of limestone and marl. The plots are oriented south-southeast. There are about 6,200 vines per hectare, resulting in a yield of 65 hl per hectare from vines with an average age of 35 years.
Vinification
The bunches already undergo a first selection during harvesting, which is followed by a second round upon arrival at the winery. The bunches are destemmed, after which the co-maceration and fermentation begin. This process is initiated by indigenous yeasts and takes 20 days. The pigeage technique is applied during this time. The wine then matures for 11 months in 10 to 15-year-old oak barrels.

Domaine Barmès-Buecher ontstond in 1985 uit het huwelijk van Geneviève Buecher en François Barmès, waarmee eeuwenoude familiewijngaarden werden samengebracht. Al van bij de start stond werken in harmonie met de natuur centraal. In 1998 schakelde het domein officieel over op biodynamische wijnbouw en drie jaar later was de volledige 18 hectare gecertificeerd. Voor Sophie en Maxime Barmès is biodynamie geen techniek, maar een voortdurende zoektocht waarbij observatie, ervaring en respect voor de natuur de belangrijkste instrumenten zijn.
