Vineyard
The grapes come from 7 small plots in the village of Okondo, totaling 10 hectares. They are located at an altitude of approximately 250 meters in the Izalde valley. The vineyards were established in 1996. There are about 3,200 vines per hectare, yielding approximately 5 tons per hectare. The calcareous soil is rich in sand and contains a lot of organic matter. Sustainable viticulture practices are employed.
Winemaking
After a double selection, the bunches are destemmed. Vinification begins with a cold maceration. A gentle pressing is followed by temperature-controlled fermentation, which is stopped prematurely.
