Vineyard
The 1-hectare vineyard is located at an altitude of 340 metres and has a western orientation. The soil consists of clay and Oolitic limestone. The yield is 50 hl per hectare.
Winemaking
The manually picked grapes are transported in small boxes to the winery. After pressing, the grapes undergo a debourbage of 12 to 24 hours. The temperature-controlled fermentation is initiated by the use of indigenous yeasts and stops naturally. Both fermentation and aging on the lees take place in a mix of foudres and old barriques. The annual production is only 6,000 bottles.

Château de Chamilly
Frankrijk · Bourgogne
