Temperate maritime with warm and rather dry summers
Vineyard
The vineyards are situated on gravel, clay, and limestone soils in Pessac-Léognan. This terroir is ideal for both Sauvignon Blanc (aromatics) and Sémillon (structure). The climate is maritime with mild temperatures, ensuring slow and even ripening. 2019 saw a warm but well-balanced growing season with sufficient water reserves in the spring. This led to aromatically ripe grapes while retaining fresh acidity.
Winemaking
The grapes are harvested cool to preserve aromatic freshness. Fermentation occurs partly in stainless steel and partly in French oak for added complexity. The wine ages for approximately 10 months on fine lees with a portion in new barriques. Regular bâtonnage provides extra texture and roundness. The result is a structured, gastronomic white Bordeaux with a balance between freshness and creaminess.
