Vineyard
The plot is located on the edge of a vast forest and nature reserve. The stony soil consists of typical calcareous clay originating from the Triassic period. The plots are cultivated in an ecologically responsible and organic manner. The average age of the vines is 20 years, yielding 35 hl per hectare.
Winemaking
The bunches are hand-picked and transported in small crates to the winery. There, they are destemmed and undergo a short skin maceration. After gentle pressing, cold static débourbage follows. Slow fermentation at low temperature begins in stainless steel tanks. After one-third of this process, the juice is transferred to oak barrels, where it also ages for 8 months.
