Vineyard
The vines are on average 20 years old and yield 45 hl per hectare. The stony soil, with a large proportion of gravel, consists of typical calcareous clay, though with a dominance of clay here. This terroir was formed during the Triassic period. To increase biodiversity, grain is sown between the vines.
Winemaking
The grapes from the oldest vines are picked manually in the morning hours, ensuring they arrive at the winery in their freshest state. Upon arrival, the bunches are destemmed and undergo direct pressing. The temperature-controlled fermentation in stainless steel tanks is carried out separately for each grape variety. Finally, this rosé matured for several months on lees in stainless steel tanks.

De geschiedenis van Commanderie de Peyrassol gaat terug tot 1204, toen de Orde van de Tempeliers het domein oprichtte als rustplaats voor pelgrims op weg naar het Heilige Land. Eeuwenlang werd het domein beheerd door de Tempeliers en later door de Ridders van Malta, die de wijngaarden met grote zorg onderhielden. Na de Franse Revolutie kwam Peyrassol in privéhanden en kreeg het onder Philippe Austruy vanaf 2001 een nieuwe dynamiek. Dankzij omvangrijke investeringen in de wijngaarden, de terrassen en de wijnkelders groeide het uit tot één van de toonaangevende domeinen van de Provence.
