Vineyard

The vineyards are located in the foothills of the Massif des Maures. The soil consists mainly of stony ground rich in calcareous clay. The plots are protected from the moist sea winds, resulting in dry, warm summers and mild winters – a typical Mediterranean climate. The terraced plots reach up to 330 metres in altitude, ensuring that the temperature fluctuations between day and night are perfect for the grapes to ripen harmoniously.

Winemaking

Each variety undergoes a separate vinification. Upon arrival at the winery, the grapes are gently pressed immediately. This is followed by a temperature-controlled fermentation in stainless steel tanks. Finally, this rosé matures for several months on lees in stainless steel tanks.

De geschiedenis van Commanderie de Peyrassol gaat terug tot 1204, toen de Orde van de Tempeliers het domein oprichtte als rustplaats voor pelgrims op weg naar het Heilige Land. Eeuwenlang werd het domein beheerd door de Tempeliers en later door de Ridders van Malta, die de wijngaarden met grote zorg onderhielden. Na de Franse Revolutie kwam Peyrassol in privéhanden en kreeg het onder Philippe Austruy vanaf 2001 een nieuwe dynamiek. Dankzij omvangrijke investeringen in de wijngaarden, de terrassen en de wijnkelders groeide het uit tot één van de toonaangevende domeinen van de Provence.
