Vineyard
The vineyards for this cuvée are located in a valley. The soil consists mainly of limestone and claystone with a large proportion of gravel originating from the Triassic period. However, there are also some plots of land with a soil made of schist. The plots are cultivated in an ecologically responsible manner. To increase biodiversity, grain is sown between the vines, which have an average age of 25 years.
Winemaking
The grapes are picked at night to ensure they arrive at the winery in their freshest condition. The bunches are destemmed. The grapes undergo direct and gentle pressing upon arrival in the cellar. The temperature-controlled fermentation in stainless steel tanks is carried out separately for each grape variety. Finally, this rosé matured for several months on the lees in stainless steel tanks.

De geschiedenis van Commanderie de Peyrassol gaat terug tot 1204, toen de Orde van de Tempeliers het domein oprichtte als rustplaats voor pelgrims op weg naar het Heilige Land. Eeuwenlang werd het domein beheerd door de Tempeliers en later door de Ridders van Malta, die de wijngaarden met grote zorg onderhielden. Na de Franse Revolutie kwam Peyrassol in privéhanden en kreeg het onder Philippe Austruy vanaf 2001 een nieuwe dynamiek. Dankzij omvangrijke investeringen in de wijngaarden, de terrassen en de wijnkelders groeide het uit tot één van de toonaangevende domeinen van de Provence.
