Vineyard
The grapes come from the Larniano vineyards, located at an altitude of 280 to 300 metres around San Gimignano. The soils are clay-sandy and rich in skeleton, with a lot of sandstone in some places. The vines are on average 25 years old and are planted at 5000 vines per hectare. The yield is limited to a maximum of 70 quintals per hectare. The harvest is done manually in small crates with selection in the vineyard.
Vinification
After a cold pre-fermentative skin maceration, alcoholic fermentation starts in stainless steel. The wine remains on the skins for 10 to 12 days for the extraction of colour, fruit, and soft tannins. This is followed by malolactic fermentation in steel. Further aging takes place for another 6 months in stainless steel. This vinification primarily emphasizes the fresh, fruity, and floral character of the Sangiovese.
