Vineyard
The grapes come from the Larniano vineyards, located at an altitude of 400 meters near San Gimignano. The soils consist of clay and sand, rich in stones and with sections of sandstone, which contributes to finesse and drainage. The vines are on average 25 years old and are planted at 5000 vines per hectare. The yield is limited to a maximum of 70 quintals per hectare. Harvesting is done manually with selection at the time of picking.
Vinification
After a few days of cold skin maceration, alcoholic fermentation starts in stainless steel tanks. The wine remains in contact with the skins for 10 to 12 days for extraction of color, aroma, and soft tannins. Malolactic conversion then also takes place in stainless steel. After that, the wine matures for another 6 months in stainless steel. This approach keeps the wine fresh, juicy, and distinctly fruit-driven.
