Vineyard

The vineyard in the village of Souzay-Champigny overlooks the Loire. It is surrounded by walls that were built as early as the the 11th century. The soil consists of a 30 cm thick top layer of clay, limestone, and sandy loam, with a thick layer of limestone underneath, which was formed in the Senonian, during the Late Cretaceous period. There are 10,000 vines per hectare. The work in the vineyard is carried out entirely organically and biodynamically.

Winemaking

The grapes are hand-picked and then transported in small crates to the winery. Alcoholic fermentation takes place in oval oak barrels of 400 and 600 litres and lasts for 2 months. After this, the wine matures on the lees for 9 months. All operations during vinification are carried out at a low temperature to preserve the fruit aromas as much as possible.

Roches Neuves kreeg in 1992 een nieuw hoofdstuk toen Thierry Germain zich in Saumur vestigde. De historische wijngaarden, waarvan sommige teruggaan tot 1850, waren voordien eigendom van Denis Duveau. Dankzij de inspirerende vriendschap met Charly Foucault van Clos Rougeard groeide Thierry uit tot één van de grote voortrekkers van de biodynamische wijnbouw in de Loire. Sinds 2004 werkt het domein volledig volgens deze filosofie.
