Vineyard
The parcel in Côteau de Feule measures 2 to 3 hectares and has an eastern exposure. Clay dominates over limestone in the soil here. The vines are a good 30 years old.
Winemaking
Vin Jaune is one of France's most strictly controlled appellations. This is due to its traditional vinification process, which is similar to that of Sherry Fino. The wine matures for 6 years and 3 months in small 228-liter oak barrels. Over time, the level drops, and the barrels are not topped up (sans ouillage), which leads to the formation of a thick white layer of yeast (flor) that partially protects the wine from the oxygen-rich air at the top of the barrel. After this oxidative maturation, the wine is bottled in 62 cl clavelin bottles.

Het verhaal van Domaine Désiré Petit begint in 1932 in het Jura-dorp Pupillin, de historische bakermat van de Ploussard. Sindsdien groeide het familiedomein uit van 1,5 naar 27 hectare, verspreid over de appellaties Arbois, Côtes du Jura en Château-Chalon. Vandaag leiden Damien en Anne-Laure Petit het domein, waar traditie en innovatie hand in hand gaan en de rijke wijncultuur van de Jura alle ruimte krijgt.
