Vineyard
The vineyard in the village of Souzay-Champigny overlooks the Loire. It is surrounded by walls that were built as early as the the 11th century. The soil consists of a 30 cm thick top layer of clay, limestone and sandy loam, with a thick layer of limestone underneath, which was already formed in the Senonian, during the Late Cretaceous period. There are 10,000 vines per hectare. The work in the vineyard is carried out entirely organically and biodynamically.
Winemaking
The grapes are hand-picked and then transported in small crates to the winery. Alcoholic fermentation takes place in 400-liter and 600-liter oval oak barrels and lasts 2 months. After this, the wine matures on lees for 9 months. All operations during vinification are carried out at a low temperature to preserve the fruit aromas as much as possible.

Domaine des Roches Neuves
Frankrijk · Loire
