Vineyard
The vines grow on the ‘Flysch di Cormons’ terroir, also known as ‘Ponca’, which was formed around 50 million years ago. The soil, primarily marl supplemented with clay and limestone, and also containing layers of sandstone, was formerly the ocean floor. As a result, there is little organic matter present. The roots are therefore forced to seek their nourishment very deep in mineral-rich layers. The vineyards are cultivated sustainably.
Winemaking
The grapes are harvested very late and undergo gentle pressing. Alcoholic fermentation takes place in stainless steel tanks. The subsequent malolactic fermentation occurs in large 10 hl barrels of French and Slavonian oak. At the end of August, it is bottled and then matures for several months in the bottle in the estate's cellars.
