The grapes come from an unsheltered plot located close to a hilltop. As a result, there is almost always a downward valley wind that dries the grapes, thus reducing the risk of diseases. The 160-meter-high plot is oriented South-West. The 45-year-old vines yield very little. The soil consists of humus and clayey loam, through which runs grey-veined quartzite.
Winemaking
The organically grown grapes are hand-picked and undergo a strict selection process. The whole bunches are pressed. Fermentation is initiated by indigenous yeasts. The 16-month aging on lees takes place in large wooden barrels. It contains 4.4 grams of residual sugar per liter.
