Vineyard
The Chardonnay grapes come from a very steep slope with a 30% gradient. This 1.5-hectare plot is located halfway up this hillside and is northeast-facing. There are approximately 8,500 vines per hectare. The vines are 50 years old. The soil consists of a mixture of marl and limestone.
Winemaking
The grapes are picked at their optimal ripeness, meaning that the harvest for each sub-plot takes place at a different time. Upon arrival at the winery, the bunches are destemmed. Pressing is slow and gentle to preserve the purity of the juice. The long alcoholic fermentation is temperature-controlled and is followed by malolactic fermentation. Maturation on the lees lasts 10 months, with half of the juice residing in oak barrels and the other half in stainless steel.
