The grapes come from 3 parcels in Meloisey, where the terroir mainly consists of clay and limestone. The 50-year-old vines benefit from a south/south-easterly orientation on several hillsides. They perform a green harvest to keep yields under control.
Winemaking
The grapes are hand-picked. Vinification takes 18 to 25 days, as opposed to the more common 10 to 12 days in Burgundy. This allows for a slower maceration process. Fermentation and malolactic fermentation take place in wooden barrels. The subsequent aging begins with a 12-month stay in wooden barrels, where the percentage of new barrels is limited. This is followed by 6 months in stainless steel tanks. Annual production is approximately 10,000 bottles.
