Vineyard
The vineyard covers about 30 hectares on the famous gravel ridges of Pessac-Léognan. The soil consists of deep gravel deposits with clay and sand in the subsoil, ideal for Cabernet Sauvignon. The average age of the vines is over 35 years. Thanks to excellent drainage, the grapes develop a great aromatic concentration while retaining freshness. The Haut-Bailly terroir is known for its combination of power, elegance, and mineral refinement.
Vinification
The grapes are harvested by parcel and vinified separately. Fermentation takes place in temperature-controlled stainless steel and concrete vats to maintain maximum precision. After malolactic fermentation, there is a strict selection of the best lots for the Grand Vin. The wine then matures for approximately 18 months in French oak barrels, a significant portion of which is new wood. The result is a wine of exceptional finesse, concentration, and elegance.
