Vineyard
The hand-picked grapes come from the flat Fürstliches Prädium plot near Lake Heideboden. Local residents nicknamed it 'Korea' in the 1950s. Here, at about 130 meters above sea level, you'll find the typical "Seewinkelschotter" soil with plenty of gravel.
Winemaking
The bunches are destemmed and the grapes undergo a 4-day skin maceration before being pressed. Fermentation, which starts spontaneously with the use of indigenous yeasts, takes place in a mix of stainless steel tanks and old oak barrels ranging from 225 to 2,000 litres. This process lasts 7 to 10 days. After this, the wine ages for 6 months on its lees in large, old oak barrels of 2,000 litres. It contains 1 gram of residual sugar per litre.
