Vineyard
The grapes come from their best vineyard with the typical Terres Blanches soil of calcareous clay. This plot is on a steep slope. The vines are 50 years old and yield 45 hl per hectare.
Winemaking
The grapes are picked by hand. Fermentation takes place at a low temperature, fluctuating between 15 and 18 °C, which helps to preserve the aromas as much as possible. This process occurs in large, upward-tapering, rectangular concrete vats to allow the sediment to settle more quickly. This wine does not undergo malolactic fermentation. The wine matures for 1 year on lees in 400-liter oak barrels.
