The cuvée originates from ancient, ungrafted Listán Blanco grapevines, cultivated on terraces at an altitude of 1300 metres. This unique location offers exceptional conditions for grape growth, with a challenging terroir that contributes to the complexity of the resulting wine. The altitude ensures cooler temperatures and longer ripening periods, while the terraces provide good drainage and aeration of the soil, allowing the grapes to develop optimally and express their characteristic flavours and aromas.
Winemaking
The grape juice is transferred to an old 500L Manzanilla cask for spontaneous fermentation and ageing on fine lees for 13 months. This choice of traditional barrel ageing contributes to the complexity and texture of the wine, while the use of the Manzanilla cask imparts a subtle influence from the barrel to the final taste. This cuvée is treated as a perpetual reserve, with small quantities drawn off (saca) by JuanFra each year, while that year's vintage wine is added to the cask. The wine is bottled unfiltered, with only modest amounts of sulphite added to ensure stability.
