Vineyard
The grapes come from a unique selection of ancient, pre-phylloxera vineyards with vines between 120 and 140 years old. These survived the phylloxera plague because they were planted on extremely sandy plots where the louse could not survive, interspersed with a deep subsoil of solid limestone. The vineyards are located on the Castilian plateau at an altitude of over 750 metres, under the previously discussed temperate continental climate with extreme day-night differences. The yield of these gnarled, old vines is phenomenally low (often less than 2,000 kg per hectare), resulting in grapes with unparalleled concentration and deep minerality. The soil is worked entirely without machinery, using draft horses and biodynamic preparations.
Winemaking
The grapes are harvested by hand with extreme selectivity into small crates. After pressing, alcoholic fermentation starts spontaneously with indigenous yeasts in open oak vats. After fermentation, the wine undergoes a complete, spontaneous malolactic fermentation on its lees. What makes this wine unique is the subsequent maturation of at least 10 to 12 months, divided over three different elements: a portion matures in large French oak barrels (500 and 600 litres), a portion in large oak foudres (1,200 to 3,000 litres), and a portion in handmade clay amphorae (tinajas) of various sizes. Finally, the wine rests in the bottle for several months before release.

Bodegas Menade
