Vineyard

The walled vineyard overlooks the Loire. The 30 cm thick topsoil consists of sand and rests on Turonian limestone. There are 6,500 vines per hectare.

Winemaking

The hand-picked grapes are transported to the winery in small crates. Alcoholic fermentation takes place in 6 hl oval barrels to preserve the minerality derived from the terroir as much as possible. The pneumatic pressing lasts 4 hours and is followed by a very long fermentation of 3 months. Finally, the wine ages on lees for another 9 months.

Roches Neuves kreeg in 1992 een nieuw hoofdstuk toen Thierry Germain zich in Saumur vestigde. De historische wijngaarden, waarvan sommige teruggaan tot 1850, waren voordien eigendom van Denis Duveau. Dankzij de inspirerende vriendschap met Charly Foucault van Clos Rougeard groeide Thierry uit tot één van de grote voortrekkers van de biodynamische wijnbouw in de Loire. Sinds 2004 werkt het domein volledig volgens deze filosofie.
