Vineyard
The vineyards are located in the chalk and clay-rich Sauternes region around Bommes. This terroir is normally known for botrytis (noble rot), but in this selection, it also yields aromatic dry white wine. Sauvignon Blanc provides tension and citrus freshness, Sémillon offers structure and roundness. 2023 saw a relatively warm season while maintaining aromatic ripeness and good acidity. Yields are limited by strict quality selection.
Winemaking
The grapes are harvested early to preserve fresh acidity and aromatic tension. After gentle pressing, fermentation takes place under temperature control to protect primary fruit aromas. The wine matures partly on fine lees (sur lie) for added texture and complexity. Stainless steel is typically used, with limited oak influence. The goal is a fresh, precise, and gastronomic dry white style with tension and purity.
