Vineyard
The vineyards are located on a plateau at an altitude of 93 meters south of the Loire. The soil consists of argilo-silty earth with emerging black schist as the parent rock. The combination of clay and schist provides both juiciness and a light tannic structure. The estate has been working organically since 2000 and is certified. Two plots, Le Clos du Grand Bézillé and Les Mommelières, provide extra complexity in the blend.
Vinification
The grapes were harvested manually from two different plots from late August to early September. One part underwent carbonic maceration for one week in a closed tank, while the other part was traditionally fermented in open vats with partial destemming and three weeks of maceration. Both fermentations occurred with minimal intervention. After pressing, the lots were assembled and further aged in tanks until bottling in June. Only a very small amount of sulfites was added during bottling.
