Vineyard
The soil of the less than 1-hectare plot consists of "marnes irisés" with blue marl, lime, clay, loam, and shale containing many shell fossils. The vines are about 25 years old and yield 25 hl per hectare. The orientation is south/south-west.
Winemaking
The hand-picked Savagnin grapes undergo fermentation in stainless steel tanks. After this, the wine is transferred to demi-muids. During the first three months of aging, when malolactic fermentation takes place, they perform regular bâtonnage. Throughout the entire 20-month aging period in demi-muids, the wine is topped up (ouillé). Subsequently, the juice is assembled in large stainless steel tanks, and the wine rests there for another month before bottling.

Het verhaal van Domaine Désiré Petit begint in 1932 in het Jura-dorp Pupillin, de historische bakermat van de Ploussard. Sindsdien groeide het familiedomein uit van 1,5 naar 27 hectare, verspreid over de appellaties Arbois, Côtes du Jura en Château-Chalon. Vandaag leiden Damien en Anne-Laure Petit het domein, waar traditie en innovatie hand in hand gaan en de rijke wijncultuur van de Jura alle ruimte krijgt.
