Vineyard
The vineyards are located in the hamlets of Cerpes and Saint-Vincent in Saumur. The soil consists of limestone, clay and silt deposits from flint. Work in the vineyards is carried out organically and biodynamically.
Winemaking
The hand-picked grapes are transported in small crates to the winery. Alcoholic fermentation takes place in 12 hl oval Stoeckinger barrels to preserve the minerality derived from the terroir as much as possible. The pneumatic pressing takes 4 hours, followed by a very long fermentation of 4 months. Finally, the wine matures on the lees for another 9 months.

Domaine des Roches Neuves
Frankrijk · Loire
