Vineyard
The domain envisioned a specific style for their white Vacqueyras, and the traditionally used Grenache Blanc didn't fit as it produces wines that are too alcoholic. The choice therefore fell on a blend of four other local grape varieties: Roussanne for the fine aromas and to give the wine a good base, Clairette for structure, Bourboulenc for its natural acidity, and finally Viognier for its richness and finesse. The vineyards are organically farmed.
Winemaking
The organic grapes are hand-picked. The four grape varieties undergo a co-fermentation. After debourbage, fermentation takes place in 600-liter oak demi-muids (Allier and Vosges). The wine ages on the lees for 10 months, using the bâtonnage technique. The wine is bottled unfiltered.
