Vineyard

The domain had a very specific style in mind for their white Vacqueyras, and the traditionally used Grenache Blanc didn't fit because it produces wines that are too alcoholic. The choice therefore fell on a blend of four other local grapes: Roussanne for the fine aromas and to give the wine a good base, Clairette for structure, Bourboulenc for its natural acidity, and finally Viognier for its richness and finesse. The vineyards are organically farmed.

Winemaking

The organically grown grapes are hand-picked. The four grape varieties are co-fermented. After debourbage, fermentation takes place in 600-liter oak demi-muids (Allier and Vosges). The 10-month aging, using the bâtonnage technique, takes place on lees. The wine is bottled unfiltered.
