The grapes come from a southeast-facing plot near Auxey-Duresses. The terroir of this plot, which measures only 45 ares, consists mainly of clay and limestone. The average age of the vines is 25 years. They perform green harvesting to keep yields under control.
Winemaking
The grapes are picked by hand. Vinification takes 18 to 25 days, in contrast to the more common 10 to 12 days in Burgundy. This allows for a slower extraction process. Fermentation and malolactic fermentation take place in wooden barrels. The subsequent maturation starts with 12 months in wooden barrels, with the percentage of new barrels being limited. This is followed by 6 months in stainless steel tanks.
