Vineyard
Originating from fossil-rich hillsides in the Côtes des Bar, with soils of calcareous clay over Kimmeridgian marl. The grapes come from the estate's oldest Pinot Noir plots, approximately 50 years old, located halfway up the slope in Celles-sur-Ource. This location combines good exposure with natural drainage and sufficiently deep soil. The south to southeast-facing slopes benefit from sun from morning until late afternoon.
Winemaking
For this vintage cuvée, only the first pressings are used. The entire vinification takes place in stainless steel tanks, with both alcoholic and malolactic fermentation. After racking in November and a light filtration in December, the wine is bottled in April following the harvest. It then matures sur lattes for 48 months. Disgorgement takes place 6 months before commercialization. Dosage: 5 g/l.
