Vineyard
This 4-hectare vineyard lies between 240 and 260 meters above sea level and has a soil consisting of calcareous clay and flint. The vines are 35 years old and yield 55 hl per hectare.
Winemaking
The manually picked grapes are transported in small crates to the winery. After pressing, the grapes undergo a debourbage of 12 to 24 hours. Fermentation is initiated by the use of indigenous yeasts and stops naturally. Both the fermentation and the 11-month aging on lees take place in a mix of stainless steel and concrete tanks. The wine is filtered before bottling. Annual production is approximately 30,000 bottles.

Château de Chamilly
Frankrijk · Bourgogne
