Vineyard
The grapes are harvested early in the morning to preserve freshness. After gentle pressing, cold settling follows to maintain aromatic purity. Fermentation takes place in stainless steel tanks at a low temperature. There is usually no or very limited oak aging to preserve the fresh, fruit-driven character. The wine is bottled relatively young to retain maximum expression of primary aromas.
Winemaking
The vineyards are located in the hilly Entre-Deux-Mers region between the Garonne and Dordogne rivers. The soils consist of limestone, clay, and sand, ideal for crisp white blends. The climate is maritime-influenced with sufficient coolness for aromatic tension. Yields are controlled to maintain concentration. The focus is on freshness and drinkability rather than power or oak complexity.
