The Klosterberg vineyard, located 160 to 180 meters high, is perfectly nestled between the Rhine Valley and the high Taunus ridge. This land formerly belonged to the Gotteshal monastery of the Cistercian order. The Riesling grapes come from the Kühn parcel, which was laid out and planted 20 years ago. In 2012, it was upgraded to Erste Lage. This parcel is very densely planted with 10,000 vines per hectare, forcing the roots to search very deep for nutrients. This ensures a guaranteed water supply during long periods of drought, and this deep rooting also contributes many minerals to the grapes. The soil consists of sand and quartz-rich loess, an aeolian deposit of silt left there by the Rhine millions of years ago.
Winemaking
The organically grown grapes are hand-picked and undergo a strict selection process. The whole bunches are pressed. This is followed by fermentation in large wooden barrels, which is initiated by the indigenous yeasts. Finally, it ages for 16 months on the lees in large wooden barrels. This wine contains 4.9 grams of residual sugar per liter.
