The 0.96-hectare plot is located on the Rosenberg, a hill in Wettolsheim with an Oligocene clay and limestone soil. The gently sloping flank has an east-northeast orientation. The vines, averaging 30 years old, yield 33 hl per hectare. With 4,900 vines per hectare, this vineyard is somewhat less densely planted.
Winemaking
After manual harvesting, the grapes are pressed and undergo a slow fermentation initiated exclusively by indigenous yeasts. The wine then matures for 10 months on its lees in large oak vats (foudres). It contains 1.3 grams of residual sugar per liter.
