Vineyard
The grapes come from vineyards around the hills of Bolzano, an ideal zone for Pinot Noir. The soils consist of loam and porphyry, which creates a beautiful combination of power and finesse. Guyot pruning is used for optimal ripening. The climate offers warm days and cool nights, which is essential for aromatic development. This terroir provides both ripeness and freshness.
Vinification
After fermentation at approximately 25°C, the wine continues to mature in large wooden vats. This maturation process provides structure and complexity without dominating the fruit. The focus is on developing finesse and balance. Pinot Noir demands precision, and this is reflected in the vinification. The result is an elegant yet structured wine.
