Vineyard
The organically grown grapes for this Pouilly-Fuissé come from vineyards in Fuissé and Solutré. The total area of these 4 parcels is only 0.8 hectares. The soil consists of limestone originating from the Jura, supplemented with marl. The vines are 75 years old and produce a low yield, resulting in a concentrated wine. There are approximately 8,000 vines per hectare.
Winemaking
The harvest is done manually, selecting only optimally ripe grapes. Pressing is carried out very delicately to preserve the aromas as much as possible. Alcoholic fermentation takes several months and is only completed in January. This takes place in small 228-liter oak barrels. This is followed by malolactic fermentation. Finally, the wine ages for 10 months on its lees in 228-liter oak barrels (30% new wood), with light bâtonnage.
