Vineyard
The hand-harvested grapes are carefully selected upon arrival and fully destemmed. Alcoholic fermentation takes place under controlled temperatures in stainless steel tanks and partly in traditional granite lagares. Afterwards, the wine undergoes malolactic fermentation to soften the harsh acids. The wine then matures for 12 months in predominantly used French oak barrels. This ensures subtle oak integration without masking the primary red fruit.
Vinification
The plots for 'Princesa' are located on the typical, steep terraced vineyards along the slopes of the Pinhão Valley. The soil consists of a dense structure of weathered slate (schist), forcing the vines to root deeply. The vines have an average age of 30 years and yield a perfectly balanced return. Thanks to a predominantly eastern exposure, the grapes benefit from the mild morning sun while remaining protected from the extreme afternoon heat. This is crucial for preserving the natural freshness in the wine.
