Vineyard

The ‘Sous les Puits’ vineyard is located in the village of Puligny-Montrachet in the Côte de Beaune and has a topsoil of clay and limestone over a layer of pure limestone. It borders Meursault to the north and Chassagne-Montrachet to the south. The plot has an eastern orientation and is situated at the top of the Blagny hill at an altitude of 370m, just above La Garenne, near a spring, hence the name “under the well”. The average age of the vines is 80 years.

Winemaking

The hand-picked grapes are pressed immediately upon arrival at the winery. Fermentation takes place in 228-litre oak barrels, starting at 15 °C with indigenous yeasts. No intervention is made as the temperature naturally remains low due to the small volume. After 2 to 3 weeks, fermentation stops naturally. Malolactic fermentation and the 16 to 18 months of maturation also occur in 228-litre oak barrels: 1 one-year-old barrel and 1 three-year-old barrel. The annual yield is only 600 bottles.

Al twaalf generaties lang houdt de familie Desfontaine de wijntraditie levend. Meer dan vier eeuwen ervaring liggen aan de basis van hun streven naar perfectie, samengevat in het motto Ex Nihilo Nihil: niets komt uit het niets. Château de Chamilly ligt in een groene vallei ten noorden van Mercurey, in het hart van de Côte Chalonnaise. Het zeventiende-eeuwse kasteel werd gebouwd op de fundamenten van een versterkte hoeve uit de veertiende eeuw en is sinds het begin van de negentiende eeuw eigendom van de familie. In 1970 nam Louis Desfontaine de leiding over. Na zijn vroege overlijden in 1999 zette zijn vrouw Véronique het werk voort. Sinds 2007 wordt ze bijgestaan door hun zonen Xavier en Arnaud, die respectievelijk verantwoordelijk zijn voor de witte en rode wijnen.
