The 0.52-hectare east-facing plot is situated on the flank of the Hengst hill, which towers above Wettolsheim. The soil consists of marl and limestone that originated in the Oligocene. There are 5,400 vines per hectare. The average 39-year-old vines yield 48 hl per hectare.
Winemaking
The grapes are picked manually and then pressed. Fermentation is initiated by indigenous yeasts. The 11-month maturation on lees takes place in old demi-muids and small oak barrels. It contains 1.7 grams of residual sugar per liter.
