Vineyard
The grapes come from about 40 plots covering a total of 17 hectares, spread across the slopes in Maillettes, Bergades, Poncétys, Terres noires, Pommards, Chênes, Surigny, Prâgnes, Bruyère, Chailloux... At the tops of these hills, the soil consists mainly of shallow limestone originating from the Jurassic period. Further down, the clay content is higher. The vines have an average age of 50 years, and 8,000 vines are planted per hectare. Only organically grown Chardonnay is cultivated. All the plots are south-east facing.
Winemaking
The grapes are picked at their optimal ripeness, meaning harvesting occurs at different times for each plot. Upon arrival at the winery, the bunches are destemmed. Pressing is slow and gentle to preserve the purity of the juice. The long alcoholic fermentation is temperature-controlled and is followed by malolactic fermentation. Aging on lees takes 9 months and takes place in stainless steel tanks.
