Vineyard
The vineyards of Saint-Véran cover 3.5 hectares and are among the best plots of the appellation. They are organically farmed. The soils are predominantly calcareous and covered with a thin layer of clay, which ensures early ripening of the grapes. This terroir yields grapes with high aromatic concentration. The interplay of limestone and clay gives the wine both freshness and volume.
Winemaking
The harvest is transported by gravity directly to the pneumatic press. Fermentation takes place with natural yeasts in temperature-controlled stainless steel tanks. The wine then matures for 12 months on fine lees, which gives it extra depth and texture. Before bottling, it is lightly filtered and receives a small dose of sulfites to ensure stability and freshness. This vinification emphasizes both the purity of the fruit and the wine's mineral tension.

In 2005 besloot Jean-Christophe Perraud het familiebedrijf een nieuwe richting te geven. Waar zijn vader de druiven nog aan de coöperatie leverde, bottelt Domaine Perraud vandaag alle wijnen onder eigen naam. Zo groeide het domein uit tot een moderne Bourgogneproducent met een sterke eigen identiteit en toegankelijke kwaliteitswijnen.
