Vineyard
The grapes come from a vineyard of only 1 hectare in Courchamps, specifically in the hamlet of Clos de l'Ecotard. This plot is managed by Michel Chèvre. The soil consists of clay and limestone. The young vines, which are about 10 years old, produce an abundance of bunches, necessitating extensive green harvesting in the spring, leaving only 4 to 6 bunches per vine. This keeps yields under control and ensures sufficient concentration. As in all their vineyards, only biodynamic and organic methods are used.
Winemaking
The hand-picked grapes undergo fermentation in a mix of 1/3 in 400-liter barrels and 2/3 in 228-liter, 2-year-old barrels. The wine matures for 8 to 12 months in 1,200-liter oval foudres.

Domaine des Roches Neuves
Frankrijk · Loire
