Vineyard
The grapes come from the small Spiesz sub-parcel within the 4-hectare Muri vineyard. The gravelly soil consists mainly of sand but also contains some limestone. The vineyard is located at an altitude of between 500 and 550 metres.
Winemaking
The harvest is done manually. Fermentation starts spontaneously through the indigenous yeasts. This process and the 36-month maturation, during which the wine remains in contact with the fine lees, take place in one large untoasted oak barrel. It was bottled in December 2022. Vinification proceeds without the addition of sulfites; only a very minimal amount of 10 mg of sulfites per liter is added during bottling. It contains 1.1 grams of residual sugar per liter.
