The wine owes its name to the sandstone sculpture of Saint Nicholas that overlooks the vineyard. The gently sloping plot, located just 50 metres from the Rhine, has a southern orientation. The nearby large body of water of the Rhine acts as a heat accumulator and thus ensures a long and even ripening cycle. The 60-year-old vines yield only a very limited return.
Winemaking
The organically grown grapes are hand-picked and undergo a strict selection. The whole bunches are pressed. Fermentation starts with indigenous yeasts. The 18-month aging on the lees takes place in large wooden barrels. It contains 3.0 grams of residual sugar per liter.
