The grapes come exclusively from a careful selection of pre-phylloxera (ungrafted) plots with vines over 100 years old. These survived the phylloxera plague thanks to the extremely sandy topsoil, which transitions into a pure, massive limestone subsoil deeper down. The vineyards are located on the Castilian plateau at an altitude of approximately 750 meters above sea level, where the moderate continental climate with its intense day-night temperature differences ensures perfect acidity retention. The yield of these gnarled, ancient goblet-trained vines is extremely low, leading to unprecedented concentration and mineral extract in the grapes. The soil is cultivated entirely without machinery, using draft horses, and work is strictly carried out according to the biodynamic lunar cycle.
Winemaking
The hand-harvested grapes undergo an extremely gentle pressing without any added sulfites. Alcoholic fermentation starts spontaneously with indigenous yeasts in underground, historic vats. What makes Sobrenatural unique is its extreme aging process: the wine ages for no less than 30 to 36 months on its fine lees (sur lie) in old oak barrels and large foudres. During these years, the wine undergoes controlled, natural micro-oxidation without the lees being stirred (no bâtonnage), which ensures unprecedented natural stabilization and depth. After this extended aging, the wine then rests for at least another 2 to 3 years in the bottle in Menade's cellars before being released onto the market.
