Vineyard
As the name of the wine suggests, the grapes come from their vineyard in Tauzy. The 2-hectare vineyard has an eastern orientation, which ensures a slow and even ripening process. The slope of this 300-meter-high plot varies between 5% and 27%. The iron-rich soil, with many pebbles and gravel, consists of loam and (red) clay. The yield is 35 hl per hectare. The Gros and Petit Manseng vines are 30 years old, while the youngest Petit Courbu vines are 9 years old.
Winemaking
The grapes are hand-picked and undergo a very strict selection process. The grapes are not crushed and are pressed immediately, gently and slowly. Fermentation begins with native yeasts. This process largely takes place in old wooden barrels of various sizes. The 8-month aging on lees takes place in used 400-liter barriques, demi-muids, and egg-shaped sandstone tanks. Finally, there is a short 3-month aging period in stainless steel tanks.
