The 25-year-old vines grow on various terroirs: 50% of the grapes come from “Les Caillottes,” typical round, large white pebbles already formed in the Jurassic period, which provide freshness, liveliness, and fruitiness; 40% of the grapes come from a chalky clay soil “Terres Blanches,” which gives the wine its power and richness; the remaining 10% grows on a silex soil. The yield is 55 hl per hectare.
Winemaking
This cuvée is a single varietal, but the hand-picked grapes come from three completely different terroirs. The vinification of these plots, with entirely different soil structures, is carried out separately. It is only during maturation that the juice from the different plots is blended. Fermentation takes place at a low temperature, fluctuating between 15 and 18 °C, which helps to preserve the aromas as much as possible. This process occurs in large, upward-facing, rectangular concrete vats to allow the sediment to settle faster. This wine does not undergo malolactic fermentation. The 10-month maturation on lees takes place in a mix of concrete tanks and large oak barrels.
