Vineyard
The grapes come from various organically managed plots with vines that are, on average, between 20 and 30 years old. The vineyards are located on a high plateau (meseta) at an altitude of 700 to 800 meters above sea level, resulting in large temperature differences between day and night. The soil is a mix of clay, limestone, and a dense top layer of pebbles (galets or boulders), ensuring excellent heat reduction and drainage. Menade maintains a strict ecosystem policy; the vineyard is a 'living garden' where natural enemies (insects and birds) and specific plants protect biodiversity and aerate the soil. Yields are deliberately kept low, between 6,000 and 8,000 kg/hectare, for optimal aromatic concentration.
Winemaking
The harvest takes place in three phases: partly by hand during the day (green harvest), partly by machine, and partly at night to prevent oxidation and to bring in cold grapes. After a gentle pressing, the juice ferments completely spontaneously with indigenous, wild yeasts in stainless steel tanks. To respect the unique soil structures, the different plots are strictly vinified separately in tanks of varying capacities. Alcoholic fermentation takes place at a controlled temperature of 18°C to 22°C. The wine does not undergo malolactic fermentation to preserve its pure, crisp acidity, but matures for another three weeks on its fine lees (sur lie) after fermentation for added texture.
