The grapes for this wine come from plots on the northern flank of Mount Etna, located between 550 and 930 meters above sea level. They are situated in the hamlets of Pietramarina, Allegracore, Piano Daini, Friera, Zucconero, and Marchesa. Traditionally, in the old vineyards here, you'll find 10 to 15% white grape varieties alongside the red ones. The 50-year-old vines grow in volcanic soil rich in sand and ash from Mount Etna.
Winemaking
Vinification begins with a 2-day cold maceration on the skins. The subsequent fermentation starts spontaneously due to the already present yeasts. This process takes place without temperature control. The wine then ages for 8 months in a mix of large foudres and concrete tanks.
